But there is always a 5 lbs difference. My dial scale gives me the higher weight and the digital weight is lower, why is that ? Does anyone recommend a good scale ( even pricey) that I can buy?

A different 5 lbs make very little different, unless you are taking a middle weight championship. And 5lbs will make you a light weight championship.
